These customisations set the console output to go through the serial port COM1 (UART 0x3F8, on IRQ 4); and, sets the mode of this UART to be a file called console.log.
Why all of this you may ask; on upgrading a VirtualBox image, I suffered from the boot blocking at "random: nonblocking pool is initialized". There are solutions to this posted on the web (just look for them), but they most involved updating Grub - the boot loader. As I could not boot, this proved difficult.
I found this solution on Launchpad.
